Baker (Ger.: "Lebzelter") Here he is deorating a pastry "Lebkuchen" (earlier called "Lebzelte"). Those are the spicy cakes made with honey and nutmeg, and he is in the process of decorating them with liquid sugar (sugar and egg white?).
